What We’re Eating…

Summertime and the eatin’ is easy. Or so I think with sheet pan dinners!  I may be a little obsessed!  Search sheet pan dinners on Pinterest and you will be in awe of the simple and delicious recipes that are out there.  This Honey Garlic Chicken was our favorite of the week!

I did follow the tip at the bottom of the page regarding the potatoes.  I was a little worried they would not be fork tender if I didn’t give them a head start.  They finished off perfectly!

I set my broiler on low.  It didn’t specify in the recipe, but I’ve had many a broiler fail so I proceed with caution.  10 minutes under the broiler did the trick!

Yum!  Easy, healthy and delicious!

What I’m Reminiscing About…

We recently returned from a fun road trip to the NorthWest.  We hit Coeur d’ Alene, Olympia, Port Angeles, and Vancouver Island.  I love traveling with these two!  I am planning to post about our trip and share our adventures with you soon!

What I’m Loving…

I went to Sephora a few weeks ago to get a good sunscreen for my face and a light foundation for summer.  The sweet lady there helped me out a ton!  I love that place!  First off, I wanted a sun screen I could apply throughout the day without ruining my makeup, feeling greasy, or causing acne. She recommended this Kate Somerville Makeup Setting Spray.   It is ah-maz-ing!  I love it!  It is light, goes on without a shine to it, and gives great protection with 50 SPF.  I also wanted a light foundation for summer.  My face gets a bit of extra color in the summer, so I needed a new shade.  Again, she nailed it.  I ended up getting this bareMinerals BAREPRO performance powder foundation and absolutely L.O.V.E it.  I have pretty fair skin and color matched to Natural 11, but there are a lot of shades to choose from.  Then, as I was finishing up I mentioned to her that I was almost out of my moisturizer and wondered what she would recommend.  She let me try a few and I decided on this Too Faced Replenishing Face Primer.  I picked it because it is really light feeling on my skin, absorbs quickly and the bareMinerals powder goes on over it really well.

What I’ve Been Up To…

I nervously launched Jen on a Journey in May not really knowing what I was doing!  I still don’t!  So…right now my mission is to learn more about blogging and make my blog a little better with each post.  I am having a blast, but it’s a slow process.  Please consider following me on Facebook and Instagram@jenonajourney as I try to get this blog off the ground. What I’m Dreading…

Dreading is a strong word…but I am not quite ready to begin making plans for next school year.  I love teaching, but also love summer and the much needed rest it gives my teacher heart.  School is never far from my mind, and I’m just about ready to hit the lesson plan book and start spending some time preparing for next year’s class.  But for now, I am enjoying going to the bathroom whenever I want, sitting down and eating my entire lunch, drinking my coffee before it gets cold and wearing my comfy summer uniform!

What I’m Working On…

I am back at it each morning!  This week has been a bit rough, but I am not stopping!  I so love having an accountability crew!  Knowing I am meeting up with people sure helps to keep me motivated!  I am the least fit, so their encouragement and love makes me push even harder.

I tried my best a grab a pic on Tuesday’s run.  See my tribe up there killin’ it!  They keep me going!  Someone has to bring up the rear, right? Let it be me!

                                   

What I’m Excited About…

Big week, this week!  We sent Ethan off to soccer camp two states away!  Ahhhh! I’m a feeling mix of excitement for him and anxiety that he’s so far away without his mama!  He is having a blast, as 14 of his teammates are with him playing soccer, hanging out, and being teenage boys.  Oh what fun!  I know it is an experience he will never forget, so for that I am excited!

What I’m Reading…

Last fall when we went to New York City we were able to see the Broadway Show, Matilda.  Really, we chose Matilda because some great tickets were available at the 50% off booth at Times Square and I absolutely love Roald Dahl.  Thank goodness we chose Matilda, we all loved it!  I had never read the book, which is crazy because if Roald Dahl has written it I’ve read it.  Or so I thought!  I just fell in love with the story of Matilda, especially the little girl that played her in the production.

         

So, naturally I put Matilda on my summer reading list thinking it would be a great read aloud for my fifth graders.  I am about 3/4 of the way through and I’m already convinced it will be a fun read for my students!  I think I’ll give it a go this year.  I’ve also heard good reviews about the movie!  So, now that’s on my watch list!

What I’m Listening To…

NeedToBreathe and Ed Sheeran stations are playing on Pandora Radio ALL.THE.TIME. on our Amazon Echo. NeedToBreathe is my favorite band.  Here is a pic I snapped at their concert in San Diego last fall!  Loved celebrating our 20th anniversary with them!

What I’m Wearing…

I have two summer uniforms! 1. workout attire and 2. comfortable clothes.  On a typical summer day, I get up early and put on my workout gear.  Later,  I change into a comfy T-shirt, some type of cropped jeans, and a pair of Birkenstocks.  And…don’t forget the pony-tail!  This may be my favorite part of my summer uniform. The no fail, pony-tail!

What I’m Doing This Weekend…

The weekend looks pretty mild, and I’m more than okay with that.  Eli has been working a lot since we’ve been home and I’m ready for a little down time with him. Maybe even a quiet, relaxing date night! We are also thinking of taking in …a sure to be fun… outdoor concert at the retirement & assisted living facility here in town.  The Cold Hard Cash Show!  It is a tribute band playing the music of Johnny Cash and The Tennessee Three!

What I’m Looking Forward To…

I’m looking forward to the low key weekend I mentioned above!  Bring it on! 🙂

What Else Is New…

Despicable Me 3 opens on Friday!  A few years ago, due to a happy accident, minions became my classroom theme.  This theme works well with 5th graders, so I have kept it.  And, to help me out they just keep coming out with more minion movies!  I will need to see this before school starts, or it will ruin my reputation as the “teacher who loves minions.”  Having this relatable theme makes the year fun, and –believe it or not– breaks down barriers starting on day one!  Seriously, who doesn’t love those quirky little yellow guys? #bello

  1. I am not ready for school to start back either, I am not even ready to think about school yet. Ha! I do like working my classroom slowly throughout July so then I still have time in August where I don’t feel too rushed to get it done. And I absolutely love and cannot wait for Despicable Me 3! I love that series. Have a great Wednesday!

    1. I completely agree with everything you said! 🙂 It seems like once I have my classroom set up and ready to my mind can start to really focus on teaching and the kids! Enjoy the day!

  2. Totally just pinned that chicken recipe- sounds great! We are reading Matilda at our house right now! The movie is a must see- super funny and great actors! Hope you have a great day- you’re kicking butt in your workouts!
